For new learners, it is suggested to buy 3mm paper and if it is for children, 5-6mm will be better so they can easily handle it. And if you are making some special patterns, the width varies again, you can follow the tutorials to prepare the material. And in terms of the weight, it is hard for light paper to keep the expected shape so you also need to check the weight when choosing them.
